Mango-Lime Ice Cream


If you love smooth, creamy, velvety ice cream, this one is for you!

This recipe is easy to whip up at home, and it won’t break your bank.

The ice cream base takes only two ingredients to make: condensed milk and heavy cream. Combined, they create a cream that’s as thick as a milkshake, yet airy like a mousse.   This ice cream is so decadent, one small scoop is enough to chase your summertime blues away.

My version of this 2-ingredient ice cream has lime juice in it, which makes it taste a lot like key lime pie. The mango chunks add texture and freshness, while the tartness from both the lime and the mango help balance the extra richness and sweetness of the cream base, making this a wonderfully well-rounded, and delectable frozen treat.

Ingredients

Ice cream base

14 oz condensed milk (1 can)
3 cups heavy whipping cream

 

ADDED FLAVORS

2 large mangoes, diced
1/2 cup fresh lime juice
1 tsp vanilla extract

Directions

1. Pour condensed milk into a large bowl. Add vanilla extract and lime juice and stir.

2. In a separate large bowl, pour heavy cream and whip it using a whisk until it forms stiff peaks.

3. Add a small amount of the whipped cream into the condensed milk and fold it in with a silicone spatula until the condensed milk becomes thinner. Fold the remaining whipped cream in gently. Leave some small lumps of cream in the mixture. This will give the ice cream a fluffy texture.

4. Gently fold diced mangoes into the mixture. Careful not to over-mix.

5. Pour mixture into a freezer-safe container, and freeze for at least 6 hours before eating.

*Note: You can substitute mango and lime for any flavor you like. Adjust the sweetness and creaminess of the ice cream by modifying the amount of condensed milk and/or heavy cream.
